| 2 tablespoons | 30ml | Cayenne pepper |
| 1 teaspoon | 5ml | Ground cinnamon |
| 1 teaspoon | 5ml | Ground nutmeg |
| 1 teaspoon | 5ml | Ground allspice |
| 2 teaspoons | 10ml | Dried chives |
| 2 teaspoons | 10ml | Dried thyme |
| 1 tablespoon | 15ml | Sugar |
| 1 tablespoon | 15ml | Dried minced onion |
| 1 tablespoon | 15ml | Salt |
| 2 | Sweet corn ears - broken in 2 | |
| 1 | Plantain, green - quartered in skin | |
| 1 | Sweet potato - slice 1/4" thick, | |
| And blanched | ||
| Oil - to drizzle |
Combine spices in a bowl by hand or in food processor. Store in an airtight container.
Sprinkle vegetables with spice and drizzle with oil. Grill 5 minutes per side. Serve with Jamaican Marinated Pork (the recipe for which is included in this collection) or other similar dishes.
