Rice Salad - {Salad Madras} Recipe - Cooking Index

1/2 teaspoon | 2.5ml | Dry mustard |
1 teaspoon | 5ml | Water |
1/2 teaspoon | 2.5ml | Salt |
1/4 teaspoon | 1.3ml | Pepper |
2 tablespoons | 30ml | Salad oil |
1 tablespoon | 15ml | Wine vinegar |
2 cups | 320g / 11oz | Cooked rice |
Peel and slice tomatoes. Cut green pepper into strips approximately 1/8-inch wide.
In salad bowl, dissolve mustard in 1 teaspoon water. Add salt and pepper. Stir in oil. Mix well. Add vinegar. Add green peppers, tomatoes, and rice, tossing after each addition. Let stand in refrigerator for 1/2 hour.
