Baked Pasta Dish

Recipe Ingredients

1 tablespoon 15mlOlive oil
1/2 cup 31g / 1.1ozOnions - chopped
1/2 cup 73g / 2.6ozBell peppers - chopped
1 packet  Mushrooms - (6 oz) sliced
3   Garlic cloves - crushed
1 can  Tomatoes - (28 oz) cut up
1 can  Tomato sauce - (8 oz)
1 can  Tomato paste - (6 oz)
2 teaspoons 10mlSugar
2 teaspoons 10mlBasil
2 teaspoons 10mlOregano
2 teaspoons 10mlPizza seasoning
1 1/2 teaspoons 7.5mlSalt
1/2 teaspoon 2.5mlBlack pepper
1/2 teaspoon 2.5mlParsley
1 packet  Any pasta shape - (14 oz)
4   Egg whites
1 packet  Fat-free cottage cheese - (15 oz)
1/2 cup 73g / 2.6ozParmesan cheese

Recipe Instructions

Preheat oven at 350F. In a large saucepan, heat oil over medium heat. Cook onions, bell peppers, mushrooms, and garlic until tender. Add tomatoes, tomato sauce, tomato paste, water, sugar, basil, oregano, pizza seasoning, salt, black pepper, and parsley. Simmer, uncovered, for 30 minutes.

Cook pasta according to package directions and drain. In a mixing bowl, combine egg whites, cottage cheese, and Parmesan cheese. Stir in pasta mixture and pour into a 13" x 9" x 2" pan. Top with tomato mixture. Bake for 30 to 40 minutes. Sprinkle with additional Parmesan cheese, if desired.
