Allegheny Squirrel Pie Recipe - Cooking Index
| 1 | Squirrel - cut 2 or 3 pieces | |
| 3 tablespoons | 45ml | Flour |
| 1/2 tablespoon | 7.5ml | Minced parsley |
| 1 teaspoon | 5ml | Salt |
| 1/8 teaspoon | 0.6ml | Freshly-ground black pepper |
| 1/2 cup | 118ml | Sliced mushrooms |
| 2 cups | 474ml | Stock or milk |
| Prepared biscuit mix |
Cover meat with water and cook for 1 hour. Remove and bone. Add flour, parsley, salt, pepper, and mushrooms to stock. Cook to thicken, 5 to 10 minutes. Add meat and pour into 2-quart baking dish. Top with biscuit mix topping. Bake at 350 degrees until golden, 30 to 40 minutes.
