1 cup | 146g / 5.1oz | Diced cooked small game |
1 tablespoon | 15ml | Vinegar |
3 tablespoons | 45ml | Melted butter |
1 tablespoon | 15ml | Bay leaf (small) |
1 teaspoon | 5ml | Salt |
1/2 teaspoon | 2.5ml | Freshly-ground black pepper |

1/2 cup | 73g / 2.6oz | Diced cooked potatoes - cold |
1/2 cup | 31g / 1.1oz | Chopped onion |
Put meat in a glass bowl and mix in vinegar with a wooden spoon. Let stand for 2 hours. Then work in melted butter, bay leaf, salt, and pepper, again with a wooden spoon. Fry bacon in a skillet, remove and crumble, and add to potatoes. Saute onion in bacon fat until brown; remove. Increase heat to high and put the meat in the skillet in a flat layer. Brown and turn and brown; if the pan is too dry, add more butter. When meat is browned on both sides, add potatoes and fold in. Reduce heat to low and saute, uncovered, for 1 hour, turning at 20-minute intervals.
