Dressing | ||
2 tablespoons | 30ml | Soy sauce |
2 tablespoons | 30ml | Rice vinegar |
1 tablespoon | 15ml | Oyster flavored sauce |
2 teaspoons | 10ml | Chili garlic sauce |
2 teaspoons | 10ml | Sesame oil |
1 teaspoon | 5ml | Sugar |
Salad | ||
1 teaspoon | 5ml | Sesame oil |
2 | Green onions - julienned | |
1 | Carrot - julienned | |
1/2 | Cucumber - julienned |
Soak bean thread noodles in warm water to cover until softened, about 15 minutes; drain. Cut bean thread noodles into 4-inch lengths. Combine dressing ingredients in a bowl; set aside.
Bring a pot of water to a boil. Add bean thread noodles and cook for 1 minute. Drain, rinse with cold water, and drain again. Pat dry with paper towels.
Place bean thread noodles in a salad bowl and toss with sesame oil. Add dressing, green onions, carrot, and cucumber; toss to coat.
This recipe yields 4 to 6 servings.
