Black Bean Feta Salad Recipe - Cooking Index
| 2 | Black beans - (15 oz ea) - rinsed, drained | |
| 1/2 cup | 31g / 1.1oz | Chopped red onion |
| 2 tablespoons | 30ml | Chopped fresh mint |
| 1 | Athenos Crumbled Feta Cheese with | |
| Garlic & Herb - (4 oz) | ||
| 4 tablespoons | 60ml | Lemon juice |
| 2 tablespoons | 30ml | Olive oil |
| 1/4 teaspoon | 1.3ml | Freshly-ground black pepper |
Mix all ingredients. Let stand 10 minutes at room temperature to marinate.
This recipe yields 3 cups.
Great Substitute: Try fresh basil in place of mint.
