Sandy's Simple Cucumber Salad For Satay Recipe - Cooking Index
This marinated cucumber and red-onion salad is a ice foil to the spicy flavor of the peanut sauce for chicken satay.
Courses: Salads1/2 cup | 118ml | Water |
1/4 cup | 59ml | White vinegar |
3 teaspoons | 15ml | Salt |
1 cup | 198g / 7oz | Sugar |
2 cups | 292g / 10oz | Medium-diced cucumber |
1/2 cup | 31g / 1.1oz | Thinly-sliced red onion |
In a medium bowl, mix the ingredients until well blended. Serve with Chicken Satay.
This recipe yields about 2 1/2 cups.
