Chipotle Barbecue Sauce Recipe - Cooking Index

| 1 cup | 237ml | Boiling water |
| 1 | Onion - chopped | |
| 1/2 cup | 80g / 2.8oz | Brown sugar |
| 1/2 cup | 118ml | Cider vinegar |
| 1/2 cup | 118ml | Water |
| 1 | Tomato paste - (12 oz) | |
| 4 | Garlic cloves - minced | |
| 2 tablespoons | 30ml | Butter |
| 1 tablespoon | 15ml | Soy sauce |
| 1 1/2 teaspoons | 7.5ml | Cumin |
| 1 1/2 teaspoons | 7.5ml | Thyme |
| 1 1/2 teaspoons | 7.5ml | Dry mustard |
| 1 teaspoon | 5ml | Tobasco sauce |
Place the chiles in the 1 cup of boiling water. Let soak for 1 hour. Remove stems and seeds and chop finely.
Melt butter in a saucepan and add onion, garlic, cumin and thyme. Saute until the onion is soft and translucent.
Add chiles (with the water), and remaining ingredients. Bring to a boil. Reduce heat, cover and simmer for 30 minutes.
