Crabmeat Spoon Bread

Recipe Ingredients

2 cups 125g / 4.4ozCooked or frozen crabmeat
3 cups 711mlMilk
1 cup 237mlCream
1 teaspoon 5mlSalt
1/4 teaspoon 1.3mlFreshly-ground black pepper
1 cup 62g / 2.2ozYellow corn meal
1/4 cup 49g / 1.7ozMelted butter
4   Eggs - beaten
1   Small can green chilies
1 cup 146g / 5.1ozCubed Monterey Jack cheese
1/8 cup 29mlB&B Liqueur

Recipe Instructions

Combine milk, cream, salt, and pepper. Heat until lukewarm, then stir in corn meal. Cook and stir until smooth. Stir in melted butter, crabmeat, eggs, chilies, cheese, and B&B Liqueur. Stir over low heat for 3 minutes.

Pour the batter into a buttered casserole, being sure it is not more than half full. Bake in preheated oven, 350 degrees, for 30 to 40 minutes or until set.

This recipe yields 8 servings.
