Red Lobster's Swordfish With Tomato Basil Relish Recipe - Cooking Index
| 4 | Swordfish steaks - (8 to 10 oz ea) | |
| 1 cup | 62g / 2.2oz | Diced fresh tomatoes |
| 1 teaspoon | 5ml | Red wine vinegar |
| 1 tablespoon | 15ml | Vegetable oil |
| 1 tablespoon | 15ml | Chopped fresh basil |
| 1/2 teaspoon | 2.5ml | Minced fresh garlic |
| 1/2 teaspoon | 2.5ml | Salt |
| 1/4 teaspoon | 1.3ml | Freshly-ground black pepper |
Cook fish on a well-oiled grill 4 to 5 minutes each side.
Mix remaining ingredients. Heat in a sauce pan over low or microwave until all ingredients are warmed through. Do not cook tomato mixture or else it will become mushy and lose its fresh flavor.
This recipe yields 4 servings.
