| 1/2 cup | 99g / 3.5oz | Butter - melted |
| 1/2 cup | 118ml | Olive oil |
| 1/2 cup | 46g / 1.6oz | Minced fresh herbs |
| = (parsley, thyme and cilantro) | ||
| 3 tablespoons | 45ml | Fresh lemon juice |
| 3 tablespoons | 45ml | Garlic cloves - crushed (large) |
| 1 tablespoon | 15ml | Minced shallot |
| Salt - to taste | ||
| Freshly-ground black pepper - to taste | ||
| 1 1/2 lbs | 681g / 24oz | Medium to large shrimp - unpeeled |
| Outback Dipping Sauce | ||
| 1 | Mayonnaise | |
| 1 | Sour cream | |
| 1/2 cup | 118ml | Tomato chili sauce |
| 1/2 teaspoon | 2.5ml | Cayenne |
For Dipping Sauce: Combine all dipping sauce ingredients and mix well. Chill until needed.
For the Shrimp: Combine first eight ingredients in large bowl. Mix in shrimp. Marinate at room temperature for one hour or in refrigerator for five hours, stirring occasionally.
Prepare barbecue with medium-hot coals. Thread shrimp on skewers. Grill until opaque (about 2 minutes per side).
This recipe yields 4 servings.
