Black Bean Spread

Recipe Ingredients

1 1/2 cups 240g / 8.5ozCooked black beans
3 tablespoons 45mlHot salsa
2   Scallions - minced
2   Garlic cloves - minced
1/2 cup 73g / 2.6ozLow-fat cottage cheese
1 teaspoon 5mlTabasco sauce
2 teaspoons 10mlCumin
1 teaspoon 5mlCoriander
  Salt - to taste
  Freshly-ground black pepper - to taste

Recipe Instructions

Combine all ingredients in a blender and blend until smooth. Add a little water, if necessary, to blend mixture thoroughly.

This recipe yields 12 servings. Serving size: 2 tablespoon.
