Recipe Ingredients

1 cup 62g / 2.2ozFinely-chopped red onions
2   Garlic cloves - minced
2 tablespoons 30mlOlive oil or vegetable oil
1/3 cup 78mlRed wine vinegar
1/4 cup 36g / 1.3ozChopped red pepper
1/4 cup 36g / 1.3ozChopped green pepper
2 tablespoons 30mlMinced parsley
1 teaspoon 5mlEqual for Recipes

  Or 2 tbspns Equal Spoonful)
1/4 teaspoon 1.3mlSalt
1/4 teaspoon 1.3mlFreshly-ground black pepper
1   Great northern beans - (15 oz) - rinsed, drained
1   Black beans - (15 oz) - rinsed, drained
  Red and green pepper rings - for garnish

Recipe Instructions

Saute onions and garlic in oil until crisp-tender in medium skillet; remove from heat and cool until warm. Stir vinegar, peppers, parsley, Equal, salt, and pepper into onions.

Pour onion mixture over combined beans in a bowl; mix well. Garnish with pepper rings.

This recipe yields 8 servings. Serving size: 1/8 recipe.
