Recipe Ingredients

1 cup 160g / 5.6ozDried beans - preferably pink
2   Water
2 teaspoons 10mlMinced garlic
1   Bay leaf
1   Onion - chopped
1 cup 110g / 3.9ozChopped celery
1/4 cup 40g / 1.4ozBrown rice
1 cup 62g / 2.2ozTomato - chopped (large)
2 cups 220g / 7.8ozCarrots - (to 3) - chopped (large)
1   Turnip - (to 2) - peeled, cubed
2   Potatoes - cubed (small)
1/2 cup 73g / 2.6ozChopped parsley
3   Green onions - minced

Recipe Instructions

Soak beans about 8 hours in water. Add garlic, bay leaf, onion, celery, brown rice, tomato, carrots, turnips and potatoes. Cook 7 hours in a crockpot on low, keeping the mixture at bare simmer.

Add parsley and green onions and cook 1 hour more.

This recipe yields 6 servings.
