| 10 cups | 625g / 22oz | Unbleached flour |
| 1 cup | 237ml | Buttermilk powder |
| 6 cups | 960g / 33oz | Light brown sugar - (firmly packed) |
| 1/4 cup | 59ml | Grated orange zest |
| 8 teaspoons | 40ml | Baking powder |
| 4 teaspoons | 20ml | Baking soda |
| 1 1/2 teaspoons | 7.5ml | Salt |
| 1 teaspoon | 5ml | Ground cinnamon |
Whisk together flour, buttermilk powder, brown sugar, orange zest, baking powder, baking soda, salt and cinnamon in large bowl. Store by 3-cup quantities in resealable plastic bags or airtight containers.
This recipe yields 6 (3-cup) bags.
