Matzo Farfel Granola

Recipe Ingredients

2 cups 474mlMatzo farfel
1 cup 93g / 3.3ozUnpeeled almonds - cut in half
1/2 cup 46g / 1.6ozShredded sweetened coconut
1/2 cup 118mlHoney
1/4 cup 59mlOil
1/2 cup 80g / 2.8ozRaisins
1/2 cup 73g / 2.6ozDiced dried apricots

Recipe Instructions

Heat the oven to 350 degrees. Line a baking sheet with foil and lightly oil the foil.

Combine the farfel, almonds and coconut in a large bowl. Pour in the honey and oil and mix well. Spread the mixture on the baking sheet.

Bake until golden brown, 20 minutes, stirring occasionally. Transfer to a platter and cool. Add the raisins and apricots and toss well.

This recipe yields about 4 cups.
