Red-Wine Vinaigrette Recipe - Cooking Index
The sugar dissolves and mellows the sharpness of the vinegar.
Courses: Salads1/4 cup | 59ml | Red-wine vinegar |
1 tablespoon | 15ml | Dijon mustard |
1 teaspoon | 5ml | Sugar |
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||
1/2 cup | 118ml | Extra-virgin olive oil |
Whisk the vinegar, mustard, sugar, salt and pepper together in a small bowl. Whisking constantly, add the oil in a slow, steady stream and continue whisking until thickened.
This recipe yields 3/4 cup for 6 servings.
