Sunshine Vinaigrette Recipe - Cooking Index
This dressing, which I created for my Rustic Chicken Salad, will enliven any salad. Keep whisking while you drizzle in the oil—the vinaigrette will emulsify (thicken).
Courses: Salads8 tablespoons | 120ml | Lemon juice |
2 tablespoons | 30ml | Dijon mustard |
1 teaspoon | 5ml | Sugar |
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||
1/2 cup | 118ml | Extra-virgin olive oil |
Combine the lemon juice, mustard, sugar, salt and pepper in a bowl. Whisking constantly, slowly drizzle in the oil until the dressing has thickened.
This recipe yields 1 cup.
Nutritional Analysis Per 2-tablespoon Serving: 137 calories, 2g carbohydrates, no protein, 14g fat, no cholesterol.
