Apple Pineapple Raita

I think of raitas as "cool downs" because they relieve the heat of Indian dishes.

Recipe Ingredients

1 tablespoon 15mlFresh lime juice
1   Granny Smith apple - cored
1 teaspoon 5mlMinced garlic
1   Fresh ginger - (abt 1") - peeled and grated
1 cup 146g / 5.1ozCrushed pineapple - drained
1 1/2 cups 355mlNonfat plain yogurt - drained
1/2 teaspoon 2.5mlSalt
1/4 cup 10g / 0.4ozChopped fresh basil leaves

Recipe Instructions

Place the lime juice in a mixing bowl, coarsely grate the apple into the bowl and toss with the juice.

Add the garlic, ginger and pineapple; toss to combine. Drain the mixture in a strainer and return to the bowl.  Add the yogurt and salt; mix together and fold in the basil. Cover and refrigerate at least 1 hour but no longer than 2 hours. Stir well before serving.

Per tablespoon: 15 calories, 3g carbohydrate, 1g protein, no fat, no cholesterol.
