| 8 oz | 227g | Fresh goat cheese - cut 3/4" cubes | 
| = (Coach Farm brand preferred or | ||
| Use mozzarella or mild feta cheese) | ||
| 1 teaspoon | 5ml | Salt | 
| 1 tablespoon | 15ml | Hot paprika | 
| 4 | Garlic cloves - peeled | |
| 2 | Jalapeño peppers - halved, seeded | |
| 1 | Green bell pepper - chopped 1/4" dice | |
| 1 cup | 16g / 0.6oz | Cilantro leaves - (tightly packed) | 
| 1/2 cup | 20g / 0.7oz | Mint leaves - (tightly packed) | 
| 1 cup | 237ml | Extra-virgin olive oil | 
| 2 tablespoons | 30ml | Sherry vinegar | 
Place cheese on plate or in shallow bowl.
In a food processor, place salt, paprika, garlic, jalapeños, green pepper, cilantro, mint and half the oil. Process to a smooth paste. Add remaining oil and vinegar and process until smooth. Pour over cheese. Leftovers are great for everything from eggs to steak.
This recipe yields 6 servings as tapas.
