| 1 cup | 146g / 5.1oz | Diced orange segments |
| 1/8 cup | 18g / 0.6oz | Finely-diced red pepper |
| 1/8 cup | 18g / 0.6oz | Finely-diced scallion |
| 1/8 cup | 7.8g / 0.3oz | Finely-diced red onion |
| 1/8 cup | 2g / 0.1oz | Chopped cilantro |
| 1/2 cup | 118ml | Orange juice |
| 1 tablespoon | 15ml | Maple syrup |
| 1 tablespoon | 15ml | Lime juice |
| 2 tablespoons | 30ml | Olive oil |
| Salt - to taste | ||
| Freshly-ground black pepper - to taste | ||
| 4 | Mahimahi fillets - (12 oz ea) |
Combine orange, red pepper, scallions, red onion, and cilantro. Add orange juice, syrup, lime juice, and olive oil. Season, to taste, with salt and pepper.
Grill the fish fillets for 4 minutes on each side and top with salsa.
This recipe yields 4 servings.
