8 cups | 1896ml | Red potatoes (medium) |
1/4 cup | 10g / 0.4oz | Chopped fresh parsley leaves |
1/4 cup | 15g / 0.5oz | Chopped green onion tops |
1 cup | 110g / 3.9oz | Chopped celery |
3 | Hard boiled eggs - chopped | |
1/4 cup | 36g / 1.3oz | Chopped bell pepper |
1/4 cup | 36g / 1.3oz | Diced pimento |
1 teaspoon | 5ml | Lemon-pepper seasoning |
2 tablespoons | 30ml | Seasoning salt |
= (Jane's Krazy mixed up salt recommended) | ||
1 tablespoon | 15ml | Dijon mustard |
1/4 cup | 59ml | Mayonnaise |
1 cup | 237ml | Sour cream |
In a large pot, boil the potatoes with the skins on for 10 to 15 minutes until tender. Let the potatoes cool just to the touch and cut into cubes.
In a large bowl, combine the remaining ingredients. Add the potatoes and mix gently.
Serve at room temperature.
This recipe yields 10 servings.
