Lemon Squares Recipe - Cooking Index
1 cup | 198g / 7oz | Butter |
2 cups | 125g / 4.4oz | Flour - plus |
4 tablespoons | 60ml | Flour |
1/2 cup | 99g / 3.5oz | Powdered sugar - plus more |

2 cups | 396g / 13oz | Sugar |
2 teaspoons | 10ml | Grated lemon rind |
1 teaspoon | 5ml | Baking powder |
5 tablespoons | 75ml | Lemon juice - (to 6 tbspns) |
Preheat the oven to 350 degrees.
To make the crust, combine the butter, 2 cups of the flour and the powdered sugar. Pat into a 13- by 9-inch pan and bake for 15 minutes.
Whisk the remaining 4 tablespoons of flour and the rest of the ingredients together. Pour over the pre-baked crust. Bake for an additional 25 minutes.
Cool completely and cut into squares. Dust with powdered sugar.
