Alaska Pollock Chowder

Recipe Ingredients

1 1/2 lbs 681g / 24ozPollock fillets - thawed if necessary
1 cup 62g / 2.2ozChopped onion
1/2 cup 55g / 1.9ozSliced celery
1   Garlic clove - minced
1 tablespoon 15mlOil
2   Tomatoes - (14 1/2 to 16 oz ea)
3/4 cup 177mlWater
1/4 cup 59mlDry white wine or water
1/2 teaspoon 2.5mlOregano - crushed
1/2 teaspoon 2.5mlSalt
1/8 teaspoon 0.6mlFreshly-ground black pepper
1 splash  Bottled hot pepper sauce

Recipe Instructions

Cut pollock into large chunks. Saute onion, celery and garlic in oil. Add tomatoes including liquid, water, wine and seasonings. Bring to boil; simmer 10 minutes.

Add pollock; simmer, covered, about 10 minutes or until fish flakes when tested with a fork.
