Seafare Saute

Recipe Ingredients

1 lb 454g / 16ozFish fillets - cut in 1" cubes
1 cup 110g / 3.9ozJulienned carrots
1 cup 237mlGreen pepper - cut 1/4" strips (large)
2 tablespoons 30mlVegetable oil
2 tablespoons 30mlTomatoes - peeled, and (large)
  Cut into wedges
1 cup 62g / 2.2ozSliced onions
1 teaspoon 5mlSalt
1 teaspoon 5mlBasil or dill
1/4 teaspoon 1.3mlFreshly-ground black pepper

Recipe Instructions

Saute onions, carrots and green pepper in oil over medium heat for 5 minutes. Add fish and remaining ingredients; stir well. Cover, reduce heat, and simmer for 10 minutes or until fish flakes easily and is no longer translucent in the center.

This recipe yields 6 servings.
