| 1 lb | 454g / 16oz | Fish fillets - cut in 1" cubes |
| 1 cup | 110g / 3.9oz | Julienned carrots |
| 1 cup | 237ml | Green pepper - cut 1/4" strips (large) |
| 2 tablespoons | 30ml | Vegetable oil |
| 2 tablespoons | 30ml | Tomatoes - peeled, and (large) |
| Cut into wedges | ||
| 1 cup | 62g / 2.2oz | Sliced onions |
| 1 teaspoon | 5ml | Salt |
| 1 teaspoon | 5ml | Basil or dill |
| 1/4 teaspoon | 1.3ml | Freshly-ground black pepper |
Saute onions, carrots and green pepper in oil over medium heat for 5 minutes. Add fish and remaining ingredients; stir well. Cover, reduce heat, and simmer for 10 minutes or until fish flakes easily and is no longer translucent in the center.
This recipe yields 6 servings.
