Oven Fried Skate Recipe - Cooking Index
| 2 lbs | 908g / 32oz | Skate fillets |
| 1/4 cup | 59ml | Milk |
| 1 | Egg | |
| 1 cup | 146g / 5.1oz | Fine cracker crumbs |
| 3 tablespoons | 45ml | Butter or margarine - melted |
| 1 tablespoon | 15ml | Onion - sliced (large) |
| Salt - to taste | ||
| Freshly-ground black pepper - to taste |
Preheat oven to 375 degrees. Wash skate and blot dry with paper towels. Cut into serving-size pieces.
Beat egg and milk together. Dip each piece of skate in egg/milk mixture and then coat with cracker crumbs. Place breaded skate pieces in a greased shallow baking pan. Top each skate piece with a slice of onion and some of the melted butter or margarine.
Bake for 15 to 20 minutes. Serve with lemon wedges.
