Pasta With Skate In Tomato-Basil Sauce

Recipe Ingredients

1 lb 454g / 16ozPan-ready skate fillets - cut 1" by 2" pieces
2 tablespoons 30mlOlive oil
1 cup 62g / 2.2ozChopped onion
1 teaspoon 5mlMinced fresh garlic
4 cups 250g / 8.8ozChopped seeded tomatoes
1 teaspoon 5mlDried basil
1/2 teaspoon 2.5mlSalt
1/4 teaspoon 1.3mlFreshly-ground black pepper
1/3 cup 78mlRed wine
1/4 cup 23g / 0.8ozMinced fresh basil leaves
1 lb 454g / 16ozPasta

Recipe Instructions

In a large skillet, saute onions and garlic in olive oil. Stir in tomatoes, dried basil, salt and pepper and simmer for 15 minutes.

Stir in skate and wine, and simmer for 3 minutes or until skate flakes easily when tested with a fork. Add fresh basil to sauce and serve over hot pasta.

This recipe yields 4 servings.

Variations: Other fish and shellfish such as mussels, monkfish, or shrimp, can be teamed up with skate.
