| 1 lb | 454g / 16oz | Pan-ready skate fillets - cut 1" by 2" pieces |
| 2 tablespoons | 30ml | Olive oil |
| 1 cup | 62g / 2.2oz | Chopped onion |
| 1 teaspoon | 5ml | Minced fresh garlic |
| 4 cups | 250g / 8.8oz | Chopped seeded tomatoes |
| 1 teaspoon | 5ml | Dried basil |
| 1/2 teaspoon | 2.5ml | Salt |
| 1/4 teaspoon | 1.3ml | Freshly-ground black pepper |
| 1/3 cup | 78ml | Red wine |
| 1/4 cup | 23g / 0.8oz | Minced fresh basil leaves |
| 1 lb | 454g / 16oz | Pasta |
In a large skillet, saute onions and garlic in olive oil. Stir in tomatoes, dried basil, salt and pepper and simmer for 15 minutes.
Stir in skate and wine, and simmer for 3 minutes or until skate flakes easily when tested with a fork. Add fresh basil to sauce and serve over hot pasta.
This recipe yields 4 servings.
Variations: Other fish and shellfish such as mussels, monkfish, or shrimp, can be teamed up with skate.
