Cucumber Curls In Butter And Mint Recipe - Cooking Index
| 4 | Kirby cucumbers - (to 6) - peeled | |
| = (or a seedless cucumber) | ||
| 2 tablespoons | 30ml | Butter | 
| Salt - to taste | ||
| Freshly-ground black pepper - to taste | ||
| 1 tablespoon | 15ml | Chopped mint - (to 2) | 
Run a good vegetable peeler down the sides of the cucumber, lengthwise to create long thin strips; keep on turning the cucumber; you'll be left with an inner core which is basically seeds and which you should discard.
Heat the cucumber curls in the melted butter for 30 seconds to a minute. Remove from heat. Season with salt and pepper; dust with mint.
This recipe yields 2 servings.
