Simple Southwest Beef Stew Recipe - Cooking Index

| 1 | Onion - chopped | |
| 14 oz | 397g | Canned tomatoes - diced |
| 15 oz | 426g | Canned pinto beans - rinsed, drained |
| 17 oz | 483g | Canned whole corn - drained |
| 4 | Potatoes - cubed | |
| 1 cup | 237ml | Picante sauce |
| 2 cups | 474ml | Water |
| 1 teaspoon | 5ml | Ground cumin |
| Salt - to taste | ||
| Freshly-ground black pepper - to taste | ||
| 1/2 teaspoon | 2.5ml | Garlic powder |
| Shredded cheese - for garnish |
Cook ground beef and onion until done; drain well. In a large pan add beef, onion, tomatoes, beans, corn, potatoes, picante sauce, water, cumin, salt and pepper to taste, and garlic powder. Simmer, covered, for 45 minutes.
Alternately, you can use a slow cooker and let it simmer all day. Serve; top with cheese.
This recipe yields 4 servings.
