Stefado - (Beef And Onion Stew) Recipe - Cooking Index
| 2 lbs | 908g / 32oz | Lean beef |
| 2 tablespoons | 30ml | Olive oil - (to 3 tbspns) |
| 2 | Garlic cloves - crushed | |
| 2 | Bay leaves | |
| 1 tablespoon | 15ml | Wine vinegar |
| 4 oz | 113g | Good-quality red wine |
| Salt - to taste | ||
| Freshly-ground black pepper - to taste | ||
| Water - as needed | ||
| 2 | Boiled small white onions - (12 oz ea) | |
| Hot cooked rice |
Saute the beef in olive oil. Add garlic, bay leaves, wine vinegar, wine and salt and pepper. Add enough water to cover. Cover and simmer for 1 1/2 to 2 hours, add more water, if necessary. When stew is ready to serve, add the onions and heat thoroughly. Serve over rice.
This recipe yields 4 to 6 servings.
