1 | Pinto beans - (15 oz) - drained | |
1 cup | 62g / 2.2oz | Frozen corn - thawed |
3/4 cup | 109g / 3.8oz | Shredded cheddar cheese |
1 | Green bell pepper - chopped | |
1/4 cup | 15g / 0.5oz | Chopped onion |
1/4 cup | 15g / 0.5oz | Chopped tomato |
1 | Sliced ripe olives - (2 1/4 oz) - drained | |
1 | Salsa - (8 oz) | |
3/4 cup | 177ml | Sour cream |
1 tablespoon | 15ml | Mayonnaise or salad dressing |
4 cups | 948ml | Shredded lettuce |

Cook rotini according to package directions; chill. In a skillet, saute Spam over medium heat until lightly browned; cool.
In a large bowl, combine rotini, Spam, beans, corn, cheese, green pepper, onion, tomato and olives. In a small bowl, combine salsa, sour cream and mayonnaise.
Toss together salsa mixture and Spam mixture. Cover and chill several hours. Spoon salad mixture over lettuce. Serve with chips.
