| 3 cups | 480g / 16oz | Brown rice - cooked |
| 1 | Granny Smith Apple - diced | |
| 2 | Celery stalks - finely chopped | |
| 1 | Red bell pepper - chopped | |
| 1/2 | Green onions - chopped | |
| 1/2 cup | 118ml | Walnut pieces |
| 1 cup | 62g / 2.2oz | Cubed cooked chicken |
| 3 tablespoons | 45ml | Chopped flat-leaf parsley |
| 1/4 cup | 59ml | Apple cider vinegar |
| 2 tablespoons | 30ml | Lemon juice |
| 3 tablespoons | 45ml | Olive oil |
| Salt - to taste | ||
| Freshly-ground black pepper - to taste |
In a mixing bowl, combine cooked rice with all other ingredients. Toss mixture lightly. Serve at room temperature or chilled.
This recipe yields 4 to 6 servings.
