Niçoise Salad Dressing Recipe - Cooking Index
This dressing is a perfect match for my Nicoise Salad.
Courses: Salads1/4 cup | 59ml | Fresh lemon juice |
1/4 cup | 59ml | Red wine vinegar |
1/4 cup | 59ml | Dijon mustard |
2 tablespoons | 30ml | Minced garlic |
2 tablespoons | 30ml | Minced shallots |
1 1/2 cups | 355ml | Extra-virgin olive oil |
Kosher salt - to taste | ||
Freshly-ground white pepper - to taste | ||
Sugar - to taste |
In a medium bowl, whisk together lemon juice, vinegar, mustard, garlic, and shallots. Slowly whisk in the olive oil to emulsify. Season to taste with salt, pepper, and sugar. Refrigerate in a covered container. When ready to use whisk again.
This recipe yields about 2 1/2 cups.
