Basil Chicken Recipe - Cooking Index
| 3/4 teaspoon | 3.8ml | Pepper - coarsely ground |
| 4 | Chicken breast halves without skin | |
| Basting Mixture | ||
| 1/3 cup | 65g / 2.3oz | Butter or margarine - melted |
| 1/4 cup | 36g / 1.3oz | Fresh basil - chopped |
| 1 tablespoon | 15ml | Parmesan cheese - grated |
| 1/4 teaspoon | 1.3ml | Garlic powder |
| 1/8 teaspoon | 0.6ml | Salt |
| 1/8 teaspoon | 0.6ml | Pepper |
| Fresh basil - sprigs, optional |
Press 3/4 tsp pepper into meaty sides of chicken breast halves.
Make the baste: Combine softened butter, the basil, Parmesan cheese, garlic powder and salt.
Grill chicken over medium coals 8 - 10 min on each side, basting frequently with basting mixture.
