Citrus And Cilantro Grilled Lake Trout Recipe - Cooking Index
| Zest and juice of 1 ea | ||
| - orange and lemon | ||
| 1 tablespoon | 15ml | Olive oil |
| 1 teaspoon | 5ml | Mustard |
| 4 | Lake trout steaks | |
| Seasoned Butter | ||
| 2 oz | 56g | Butter |
| Salt | ||
| Garlic powder | ||
| Black pepper | ||
| Cilantro or parsley | ||
| - finely chopped |
Grate the orange and lemon zest. Blend together the zest and juice, oil and mustard. Pour the marinade over the steaks in a shallow dish and marinade for 1 hour.
Meanwhile blend the butter and seasonings. Place on a sheet of foil and roll up in a log. Chill until firm then cut into 8 rounds.
Drain and grill the steaks 4-5 min per side over high heat, basting occasionally with the marinade.
Serve with the cilantro butter rounds.
