Grilled Fish With Pineapple-Cilantro Sauce Recipe - Cooking Index
| 1 section | Pineapple - (about 2 lb) (medium)- peeled cored and | |
| 2 tablespoons | 30ml | Cold water |
| 2 tablespoons | 30ml | Sugar |
| 3/4 cup | 177ml | Unsweetened pineapple juice |
| Salt | ||
| 2 tablespoons | 30ml | Lime juice |
| Pepper to taste | ||
| 2 | Garlic - minced | |
| 6 | Halibut, salmon or haddock - steaks or fillets | |
| 1/2 teaspoon | 2.5ml | Jalapeno pepper - to 1 tsp grilled |
| 2 tablespoons | 30ml | Minced cilantro |
| 1 tablespoon | 15ml | Cornstarch |
Heat Pineapple, Juices, Garlic and Jalapeno pepper to boiling in a medium saucepan; Reduce heat and simmer, uncovered about 5 minutes. Stir in cilantro; Heat to boiling.
Mix Cornstarch and cold water, Stir into boiling mixture. Boil, stirring constantly, until thickened. Remove from heat; Cool 2-3 minutes.
Stir in sugar; Season to taste with salt and pepper.
Serve warm over Fish or Pork.
