| 2 cups | 125g / 4.4oz | Plain flour - (maida) |
| 1 cup | 237ml | -- ¥ |
| 1 | Flour | |
| 1/2 teaspoon | 2.5ml | Soda bicarb |
| 2 tablespoons | 30ml | Curds |
| Salt to taste | ||
| Oil to shallow fry |
Sieve together flours, soda and salt.
Take in a large bowl, add curds.
Add enough water to make a batter.
The batter should coat the back of a spoon easily.
Heat griddle, pour a serving spoonful of batter.
Spread thinly with back of spoon.
Sprinkle 1 teaspoon oil to shallow fry.
When crisp lift with spatula. Serve hot with chutney
Makes: 10 - 12 dosas of 7" diameter
Shelflife: Dry ingredients may be premixed, rest instant.
Texture: Thin and crisp.
