| 1 | White onion - finely chopped | |
| 1 | Green pepper - seeded and finely chopped | |
| 1 | Scotch bonnet pepper - seeded and finely | |
| 2 | Garlic - minced | |
| 1 teaspoon | 5ml | Salt |
| 1 teaspoon | 5ml | Freshly ground black pepper |
| 1/2 cup | 118ml | Chicken stock |
| 1/2 cup | 118ml | White wine vinegar |
| One lime - juice of | ||
| 1 teaspoon | 5ml | Sweet paprika |
| 1 teaspoon | 5ml | Dried oregano |
| 2 sections | Fresh coriander - finely chopped | |
| 2 sections | Fresh parsley - finely chopped |
In a large bowl, combine all the ingredients to form a paste. Cover and refrigerate.
