Jennie's Herring Salad

Recipe Ingredients

4   Salt herring fillets
4   Scallions
6   Radishes
2   Tomatoes
2   Green peppers
1 cup 237mlShredded lettuce
1/4 cup 59mlCider vinegar
3 tablespoons 45mlSalad oil
1 teaspoon 5mlSugar
1/4 teaspoon 1.3mlPaprika
1/4 teaspoon 1.3mlFreshly ground black pepper

Recipe Instructions

Cut the herring into half-inch pieces. Slice the scallions and radishes, cut the tomatoes into quarters or eighths and dice the peppers. Toss these ingredients together with the lettuce, vinegar, oil, sugar, paprika and pepper. Chill and serve as an appetizer. Serves 6.
