Impossible Coconut Pie Recipe - Cooking Index

| 1 | Margarine - softened | |
| 1 teaspoon | 5ml | Vanilla |
| 2 cups | 474ml | Milk |
| 3/4 cup | 148g / 5.2oz | Sugar |
| 1/2 cup | 31g / 1.1oz | Flour |
| 1/8 teaspoon | 0.6ml | Salt |
| 3/4 teaspoon | 3.8ml | Baking powder |
| 1 cup | 93g / 3.3oz | Coconut - (reserve 1/2 cup) |
Put all ingredients into a blender and blend 30 seconds.
Grease and flour 10-inch pie pan or 9-inch square pan.
Pour batter into pan and sprinkle remaining coconut over batter.
Bake at 350F for 40 to 45 minutes and coconut is golden brown.
