Greek Basil Dressing

Recipe Ingredients

1   Garlic clove - minced
1   Shallot or scallion - cut into thirds
6   Greek olives - pitted
1 teaspoon 5mlDijon mustard
1 tablespoon 15mlBalsamic vinegar
1/4 teaspoon 1.3mlGrated lemon zest
1 tablespoon 15mlFresh lemon juice
1 tablespoon 15mlTomato - quartered (small)
1/4 teaspoon 1.3mlFreshly ground pepper
3 tablespoons 45mlChopped fresh basil
1/4 cup 59mlOlive oil
  Salt and pepper - to taste

Recipe Instructions

In a blender or food processor, blend all ingredients except olive oil.

Add olive oil gradually, processing until combined. Add salt and pepper to taste.

Yield: Makes 2/3 cup.
