Ornish Couscous Salad Recipe - Cooking Index
| 2 1/2 cups | 592ml | Cooked couscous |
| 2 cups | 125g / 4.4oz | Fresh tomato - diced |
| 3/4 cup | 109g / 3.8oz | Fresh mint - chopped |
| 1/2 cup | 31g / 1.1oz | Onion - minced |
| 1/2 cup | 73g / 2.6oz | Cucumber - diced |
| 1/2 cup | 73g / 2.6oz | Fresh parsley - chopped |
| 4 tablespoons | 60ml | Lemon juice |
| 10 | Garlic - minced | |
| 1/2 teaspoon | 2.5ml | Ground cumin |
| 1/2 teaspoon | 2.5ml | Ground coriander |
| Black pepper - freshly ground | ||
| Salt |
Prepare the couscous according to package directions.
In a large bowl, combine the couscous, tomato, mint, onion, cucumber, parsley, lemon juice, garlic, cumin, and coriander.
Season to taste with pepper and salt.
