Quick Potato Salad For One Recipe - Cooking Index
1/4 cup | 59ml | Mayonnaise |
1 tablespoon | 15ml | Roasted red pepper - drained, chopped |
1 tablespoon | 15ml | Onion - finely chopped |
1 1/2 teaspoons | 7.5ml | Cider vinegar |
1 teaspoon | 5ml | Style-style mustard |
1/4 teaspoon | 1.3ml | Salt, dash pepper |
1 | Fresh Idaho potato - baked, cubed |
In small bowl combine first seven ingredients; mix well.
Add potatoes; toss to coat well.
Cover and refrigerate.
