Summer Apple Salad

Recipe Ingredients

3   Gelatin - unflavored
1 cup 237mlWater - cold
3/4 cup 148g / 5.2ozSugar
1 1/2 teaspoons 7.5mlSalt
3 cups 711mlWater - coiling
1/3 cup 78mlVinegar
1/4 cup 59mlLime juice
2 cups 474mlApples - unpeeled and finely (large)
  (about 2-1/2 cups)
1 cup 146g / 5.1ozPepper green - finely chopped
1/2 cup 31g / 1.1ozGreen onion - chopped
  Lettuce
  Apple wedges, opt.

Recipe Instructions

Soften gelatin in cold water; stir well.

Add sugar and salt. Gradually add boiling water, stirring until gelatin is dissolved.

Add vinegar and lime juice.

Chill until consistency of unbeaten egg white. Fold in apple, green pepper, and onion.

Spoon into 12 (1/2 cup) individual molds, and chill until set.

Unmold on lettuce-lined plate, and garnish with apple wedges, if desired.
