Cranberry Chipotle Compote Recipe - Cooking Index
| 1 tablespoon | 15ml | Vegetable oil |
| 3 tablespoons | 45ml | Apple (medium) |
| 3 tablespoons | 45ml | Pear (medium) |
| 1/3 cup | 53g / 1.9oz | Raisins |
| 1/4 cup | 59ml | Grand Marnier |
| 1 lb | 454g / 16oz | Cranberries - fresh |
| 4 oz | 113g | Chipotle pepper - chopped fine |
| 2 teaspoons | 10ml | Ground cinnamon |
| 1 cup | 198g / 7oz | Sugar |
| 1 | Orange | |
| 1/2 cup | 118ml | Fresh orange juice |
| 1/2 teaspoon | 2.5ml | Nutmeg |
| 1/4 cup | 59ml | Grand Marnier |
Peel, core and dice pears and apples (medium). Heat oil on medium high until hot. Add pears, apples and raisins. Sautee 3-5 min, or until soft.
Add 1/4 C Grand Marnier and deglaze pan. Add cranberries, chipotles, cinnamon, sugar, orange zest and orange juice. Stir and simmer for 40-45 minutes until it begins to thicken. Add nutmeg and 2nd 1/4 C of Grand Marnier and mix.
Refrigerate until ready to serve (cold).
Makes about 1 quart.
