| 6 | Tomatoes - blanched, peeled | |
| Chopped | ||
| Seeded - and chopped | ||
| 2 tablespoons | 30ml | Mint - chopped |
| 1 | Papaya - peeled, seeded, and | |
| 1 tablespoon | 15ml | Cilantro - chopped |
| Diced | ||
| 1/4 cup | 59ml | Fresh lime juice |
| 1/2 | Red onion - diced | |
| 1/4 cup | 59ml | Olive oil |
| 1/4 cup | 59ml | Macadamia nuts - toasted and |
| Salt and pepper |
Combine all ingredients, and adjust seasonings to taste.
Best served with grilled fish or chicken.
