Chicken With Peanut Sauce Recipe - Cooking Index
| 2 lbs | 908g / 32oz | Chicken - cut up |
| 1/2 teaspoon | 2.5ml | Salt |
| 1 lb | 454g / 16oz | Tomatoes - peeled |
| 6 oz | 170g | Peanuts |
| 1 oz | 28g | Onion - chopped (small) |
| 1 | Garlic | |
| 1/2 | French roll or 1 (small) | |
| 1 | White bread - browned in oil | |
| 4 | Cloves | |
| 2 tablespoons | 30ml | Lard or oil |
| Salt and pepper to taste |
Half cover the chicken with salted water; cover and cook until tender.
Blend remaining ingredients, except lard or oil, and saute sauce, adding a little of the cooking liquid.
Stir until thick. Season to taste. Add the chicken and simmer only long enough for it to absorb the taste.
Note: Pork or veal may be substituted.
