Madeira Sauce - 1 Recipe - Cooking Index
1 cup | 237ml | Basic brown sauce - * see note |
2 tablespoons | 30ml | Chopped mushroom peelings or stems - optional |
1/4 cup | 59ml | Madeira wine |
1 | Freshly ground pepper |

In small, heavy saucepan, combine brown sauce and mushroom peelings (if available). Bring to boil. Lower flame and cook, uncovered, over a very low flame for 15 minutes.
Add Madeira wine and pepper. Cook until mixture is hot, but do not allow to boil.
To be used with red meat.
