| 1 | Red bell pepper - diced | |
| 1 | Green bell pepper - diced | |
| 1 | Yellow bell pepper - diced | |
| 2 | Tomatoes - cut in quarters | |
| Radish stars | ||
| Dressing | ||
| 1 | Egg yolk | |
| 1 cup | 62g / 2.2oz | Chopped green onions |
| 3 tablespoons | 45ml | White vinegar |
| 1 tablespoon | 15ml | Creole mustard |
| 1/4 teaspoon | 1.3ml | Chopped garlic clove |
| 1/2 teaspoon | 2.5ml | Sugar |
| 1/2 teaspoon | 2.5ml | Salt |
| 1/2 teaspoon | 2.5ml | White pepper |
| 1 tablespoon | 15ml | Worcestershire sauce |
| 1 cup | 237ml | Vegetable oil |
NOTE: This is the house salad served at Orleans Cajun-Creole restaurant in West Los Angeles, California.
*** SALAD ***
1. Put all ingredients except tomatoes, radishes and dressing in salad bowl.
2. Spoon 4 tablespoons dressing over salad; toss (add more dressing to taste).
3. Garnish with tomatoes and radishes.
*** DRESSING ***
Combine all ingredients in screw-top jar; shake well.
